I have installed the trial version of PitStop Pro, but it turns out that this is not the software I need and I'd like to uninstall it.
Background
PitStop Pro is a plug-in for Adobe Acrobat Pro.
Solution Uninstalling PitStop Pro on Windows: First deactivate your license. You can do this via the PitStop Pro About Panel.
(You can ignore this if you are using a trial.) 
Go to Start/ Settings/ Control Panel/ Add or Remove Programs/
Select PitStop Pro and choose to uninstall it.
 Uninstalling PitStop Pro on Mac: First deactivate your license. You can do this via the PitStop Pro About Panel.
(You can ignore this if you are using a trial.) 
Remove the following folder:
If you are using PitStop Pro 13 or lower: 
/Applications/Adobe/Adobe Acrobat  Pro/Adobe Acrobat Pro.app/Contents/Plug-ins/Enfocus
(You can open Adobe Acrobat Pro.app by right clicking and choosing 'Show Package Contents'.)
If you are using PitStop Pro 13, update 1 or higher: 
/Library/Application Support/Adobe/Acrobat//Plug-ins/Enfocus
If you only want to remove PitStop Pro, then the above steps are sufficient. If you want to install an older version of PitStop Pro, please also follow the next steps:
Open menu Go in Finder and choose the option 'Go to Folder…'
Type in the following path:
 /var/db/receipts/
 and press the Go button.
Search for files named like this and remove them (if available):
 com.enfocus.PitStopPro.bom
 com.enfocus.PitStopPro.plist
Open the following folder in Finder:
 /Library/Application Support/Enfocus/Applications/Installed/
Search for a file named like this and remove it (if available):
 PitStopPro.man
Empty the trash bin.

I have upgraded to Acrobat DC and my PitStop Pro has disappeared.
Cause
Adobe Acrobat DC works as an update rather than an upgrade, so your previous Acrobat installation has been overwritten and all plug-ins deleted.
You will either need to move the PitStop Pro installation or will need to re-install your PitStop Pro version, however, if you are running a Macintosh you should also be aware of several other factors:
Adobe only supports Acrobat DC on OS X 10.9 and 10.10
In addition, Adobe Acrobat DC now runs as a 64-bit application on Macintosh. This means that any version of PitStop below version 12 update 3 will not work, as these are 32-bit applications. Therefore, to work with Adobe Acrobat DC on a Macintosh, you need to be using PitStop 12 update 3 or higher.
Currently, the Windows version of Adobe Acrobat DC is still 32-bit
